El Jefe Hotdogs was born from a simple conviction: the everyday hotdog is one of the most honest dishes in American food — and it's been treated like an afterthought for far too long.

Located on North St. Marys Street in the heart of San Antonio, we craft every order from scratch. Our sausages are all-beef, our buns are baked locally, and our sauces are made in-house daily. Nothing is rushed. Nothing is arbitrary.

We draw on the bold, layered flavors of South Texas and Mexican culinary tradition — smoky chipotle, bright limeta, slow caramelized onions — and pair them with technique that takes time.
